Makis (Adam) Kostikas is an architect distinguished for his work in the private sector and on architectural international competitions. Above all he is a citizen with aesthetic, social and political sensitivities. Founder of the NGO “Movement of groups and active citizens for the salvation of the historical center of Athens” with the blog istorikoghetto.wordpress.com. He lives in Plaka for many years and his company’s office is located in Plateia Theatrou in the desolated part of Athens. He is acknowledged for his mild but very acute manner verbally and on writing, especially on issues of public space.
On his seventies he discovered in Paros his new
creative and passionate interest.
The adventure begins...
1995
Paros - Naousa - Kamares
1 hectare, 3 dwellings, the land with the vines and the olive trees that needed a attention, affection and care.
2005
We produced the first organic olive oil with the characteristics of extra virgin of the koroneiki variety, highly acclaimed for its fruity and fresh flavour.
2008
We produced the first experimental wine with a memorable taste.
2009 - 2011
More experimental vinification with consultant and mentor, greek-canadian winemaker George Papageorgiou, old friend and famous for his wines.
2012
Time for the big decision and why not. Only local varieties from Paros and Cycladic Islands, and so, it was the founding of the experimental VINERY ALISSAFI - domaine Adam - Paros.
2012 - 2015
Studies and experimental vinifications of white, red and rosé from local varieties: Aidani, Monemvasia, Mantilaria and Vaftra.
2015
The big decision to come into the world.
We got official authorisation for our small winery "Alissafi", Domain Adam.
2016 June
The first production (from organically grown grapes) is ready for distribution: white, rose and red wine.

Rosé Mantilaria (500 bottles)
Classic white wine vinification method and aged in French oak wine-barells for 8 months.
It can also be consumed as an aperitif at 12 °C
Red Mantilaria, Vaftra, Monemvasia (4000 bottles)
Classic red wine vinification temprature controlled stainless steel fermentation tank.
A distinctive flavoured wine, soft and round with substantial body which promises a lovely tasting experience.
2016 October
150 olive trees certified for organically grown koroneiki variety olives. We harvest our olives by hand and hand select them and by the method of cold pressed at low tempratures in the oil mill we produce extra virgin olive oil.
